I personally enjoy simple meals and don't eat much meat - I eat a lot of chilli and curry, and while lentils and beans are not particularly exciting on their own, they're great when you add plenty of vegetables (ideally whatever's in season, that's usually cheapest) and a nice mix of spices (which are pretty cheap when dried). I generally make it in bulk so that I can do it properly less often, so I basically have a freezer full of home made ready meals. That also means that ordering food or going to a restaurant is generally less convenient than my own food, which also saves money (probably less practical the more people you have to feed though, this is just for me).

Also makes the times I do go out for food with friends more special, although a meal made by friends is just as fun in my opinion!
